If it’s a lazy Saturday morning and you want something sweet for breakfast, then check out our recipes below. These require a simple shopping list and minimal effort, but they produce amazing dishes. We will quench your cravings for dessert-like pancakes, a bowl of warm quinoa, or easy-to-eat muffins.

Red Velvet Pancakes
Yields 4
Ingredients
  1. Red velvet cake mix 2 c
  2. Butter (melted) 3 T
  3. Egg 1
  4. Whole milk 1 c
  5. Nonstick cooking spray
  6. Cream cheese (whipped) 6 T
  7. Confectioner’s sugar 4 T
  8. Heavy cream 4 T
  9. Vanilla extract ¼ t

Instructions
  1. Combine the cake mix with the milk, egg, and butter in a large mixing bowl. Continue to mix until the batter is free of lumps.
  2. Heat your griddle or a large skillet to medium heat and coat with the nonstick cooking spray.
  3. Use a large spoon to drop dollops of the batter on the griddle or in the skillet. Cook on one side until it becomes golden and bubbles form on top; flip. Cook second side until golden; transfer to serving dish.
  4. In a separate bowl, combine the cream cheese, sugar, heavy cream, and vanilla using a whisk or hand mixer. Serve with pancakes.

Chunky Monkey Quinoa Bowl
Yields 1
Ingredients
  1. Quinoa ½ c
  2. Milk (divided) 1 ¼ c
  3. Water ½ c
  4. Salt
  5. Banana (mashed) ½
  6. Banana (sliced) ½
  7. Honey 2 t
  8. Cocoa powder 2 t
  9. Vanilla extract ½ t
  10. Mint

Instructions
  1. In a saucepan, combine the quinoa, water, a pinch of salt, and 1 cup of milk; boil.
  2. Turn down the heat and simmer for about 10 minutes (the quinoa should absorb the liquid.)
  3. In a bowl, thoroughly combine the mashed half of the banana, the cocoa powder, honey, and vanilla. Add in the quinoa; thoroughly combine everything.
  4. Top the quinoa bowl with the banana slices and some fresh sprigs of mint.

Blueberry Mini Muffins
Yields 12
Ingredients
  1. Whole-wheat flour 2 c
  2. Oats ½ c
  3. Baking powder 1 T
  4. Sugar ½ c
  5. Salt ½ t
  6. Cinnamon 1 pinch
  7. Butter (melted, cooled) ¼ c
  8. Buttermilk 1 ¼ c
  9. Vanilla 1 t
  10. Egg 1
  11. Blueberries 1 ½ c
  12. Powdered sugar for garnish

Instructions
  1. Preheat your oven to 350 F. Coat a muffin tin with nonstick cooking spray.
  2. Combine flour, oats, baking powder, salt, sugar, and cinnamon in a large bowl; whisk.
  3. Create a well in the mixture; add the egg, buttermilk, vanilla, and melted butter. Fold in and mix wet and dry ingredients.
  4. Use a rubber spatula to fold in the blueberries.
  5. Use a spoon to place a dollop of the batter in the muffin tin compartments, filling them ¾ full. Sprinkle powdered sugar on top.
  6. Bake for 15-20 minutes until they come out clean with a fork. Remove from oven; let cool 10 minutes before serving.
