Red Velvet Pancakes

Ingredients
- Red velvet cake mix 2 c
- Butter (melted) 3 T
- Egg 1
- Whole milk 1 c
- Nonstick cooking spray
- Cream cheese (whipped) 6 T
- Confectioner’s sugar 4 T
- Heavy cream 4 T
- Vanilla extract ¼ t

Instructions
- Combine the cake mix with the milk, egg, and butter in a large mixing bowl. Continue to mix until the batter is free of lumps.
- Heat your griddle or a large skillet to medium heat and coat with the nonstick cooking spray.
- Use a large spoon to drop dollops of the batter on the griddle or in the skillet. Cook on one side until it becomes golden and bubbles form on top; flip. Cook second side until golden; transfer to serving dish.
- In a separate bowl, combine the cream cheese, sugar, heavy cream, and vanilla using a whisk or hand mixer. Serve with pancakes.

Chunky Monkey Quinoa Bowl

Ingredients
- Quinoa ½ c
- Milk (divided) 1 ¼ c
- Water ½ c
- Salt
- Banana (mashed) ½
- Banana (sliced) ½
- Honey 2 t
- Cocoa powder 2 t
- Vanilla extract ½ t
- Mint

Instructions
- In a saucepan, combine the quinoa, water, a pinch of salt, and 1 cup of milk; boil.
- Turn down the heat and simmer for about 10 minutes (the quinoa should absorb the liquid.)
- In a bowl, thoroughly combine the mashed half of the banana, the cocoa powder, honey, and vanilla. Add in the quinoa; thoroughly combine everything.
- Top the quinoa bowl with the banana slices and some fresh sprigs of mint.

Blueberry Mini Muffins

Ingredients
- Whole-wheat flour 2 c
- Oats ½ c
- Baking powder 1 T
- Sugar ½ c
- Salt ½ t
- Cinnamon 1 pinch
- Butter (melted, cooled) ¼ c
- Buttermilk 1 ¼ c
- Vanilla 1 t
- Egg 1
- Blueberries 1 ½ c
- Powdered sugar for garnish

Instructions
- Preheat your oven to 350 F. Coat a muffin tin with nonstick cooking spray.
- Combine flour, oats, baking powder, salt, sugar, and cinnamon in a large bowl; whisk.
- Create a well in the mixture; add the egg, buttermilk, vanilla, and melted butter. Fold in and mix wet and dry ingredients.
- Use a rubber spatula to fold in the blueberries.
- Use a spoon to place a dollop of the batter in the muffin tin compartments, filling them ¾ full. Sprinkle powdered sugar on top.
- Bake for 15-20 minutes until they come out clean with a fork. Remove from oven; let cool 10 minutes before serving.
