Spring is in the air, and that means that your grocery shopping list is going to include more delicious, nutritious berries. So let’s take a look at some yummy recipes that really focus on the delightful flavors of warm-weather fruits. Strawberry Spring Salad
Yields 8
What happens when you pair leafy greens with ripe strawberries and some tangy cheese? Beautiful things happen, like this strawberry spring salad! Be sure to make a big bowl of this, because everyone will want to scarf it up!
Ingredients
  1. Water ¼ c
  2. Sherry vinegar ¼ c
  3. Agave nectar 4 t
  4. Yellow onion (thinly sliced) ⅔ c
  5. Dijon mustard 1 t
  6. Black pepper ¼ t
  7. Kosher salt ⅛ t
  8. Extra-virgin olive oil 3 T
  9. Leafy green salad mix 8 oz
  10. Blue cheese crumbles ½ c
  11. Fresh strawberries (sliced) 6 oz.

Instructions
  1. In bowl, mix together water, 1 tablespoon agave nectar, and 2 tablespoons sherry vinegar. Toss in sliced onion, let sit 30 minutes; drain.
  2. Add the rest of the sherry vinegar and agave nectar. Add salt, black pepper, and dijon mustard; whisk together. One tablespoon at a time, whisk in olive oil.
  3. In large bowl, add salad greens. Pour salad dressing over greens; toss to coat thoroughly. Add strawberries and blue cheese crumbles; toss. Serve.

Berry-Liscious Tart
This is the perfect dish to bring to Sunday brunch or to delight in on a lazy spring afternoon. With blackberries and blueberries, this tart gets a rich deep violet color, and the flavor is out of this world. This recipe makes the dough from scratch, but you can use refrigerated pastry dough to save time.
Ingredients
  1. All-purpose flour 1 ¾ c plus 3 T
  2. Granulated sugar ⅓ c plus ½ c
  3. Cornmeal ¼ c
  4. Salt ¼ t
  5. Butter (chilled, cubed) ½ c
  6. Buttermilk ⅓ c
  7. Blueberries 4 c
  8. Blackberries 2 c
  9. Lemon juice 2 T
  10. Milk 2 T
  11. Egg white 1 large
  12. Turbinado sugar 1 ½ T

Instructions
  1. In food processor, add 1 ¾ cup flour, ⅓ c granulated sugar, cornmeal, and salt. Pulse for two seconds, then add butter and pulse to create coarse meal.
  2. Turn food processor to low speed and gradually add buttermilk. Remove dough from food processor, shape into ball, wrap in plastic wrap, and let sit 30 minutes.
  3. Preheat oven to 350 F.
  4. Unwrap dough and place on lined baking sheet. Roll dough out into disk about 15 inches in diameter.
  5. In small bowl, prepare filling. Combine berries, 3 tablespoons flour, ½ cup granulated sugar, and lemon juice. Pour berry mixture onto rolled-out dough, leaving about 2 inches free at edges. Fold edges into center of dough and gently press them down.
  6. In small bowl, whisk together milk and egg white. Brush mixture onto dough; sprinkle turbinado sugar on top. Bake 1 hour, then remove tart from oven and let sit 30 minutes. Serve.
