  2. ricotta cheese ½ c

Instructions
  1. Toast the bread to your desired doneness. To make the butter, thoroughly combine the room temperature butter, brown sugar, cinnamon, and salt in a small bowl.

This is a step up from your typical piece of toast. Perfect for a savory breakfast or a yummy snack, you will get your veggies, protein, and carbs with this easy recipe!
Ingredients
  1. asparagus 1 lb.
  2. olive oil 1 ½ T (plus ½ c)
  3. salt ½ t
  4. black pepper ½ t
  5. sesame seeds (toasted) 1 T
  6. eggs (poached) 4
  7. whole-wheat bread 4 slices
  8. green onions (thinly sliced) 2
  9. Dijon mustard ½ T
  10. egg yolk 1
  11. garlic (minced) 2 cloves
  12. lemon juice 2 T
  13. whole grain mustard 1 T

Instructions
  1. Preheat your oven to 400 F. On a greased or lined baking sheet, place the asparagus; sprinkle with olive oil, salt, and pepper.
  2. Roast the asparagus for 15-20 minutes. Meanwhile, toast your bread.
  3. To make the sauce, thoroughly combine the mustards, egg yolk, garlic, and lemon juice. Slowly add the ½ cup of olive oil. Add salt and pepper to taste.
  4. Divide the asparagus between the slices of bread. Top with a poached egg and drizzle with the mustard sauce. Sprinkle the sesame seeds on top, as well as salt and pepper. Enjoy!
