Ingredients
- asparagus 1 lb.
- olive oil 1 ½ T (plus ½ c)
- salt ½ t
- black pepper ½ t
- sesame seeds (toasted) 1 T
- eggs (poached) 4
- whole-wheat bread 4 slices
- green onions (thinly sliced) 2
- Dijon mustard ½ T
- egg yolk 1
- garlic (minced) 2 cloves
- lemon juice 2 T
- whole grain mustard 1 T

Instructions
- Preheat your oven to 400 F. On a greased or lined baking sheet, place the asparagus; sprinkle with olive oil, salt, and pepper.
- Roast the asparagus for 15-20 minutes. Meanwhile, toast your bread.
