Tuscan-Style Pork

Italian-inspired and melt-in-your-mouth good.

Yields 8 Servings

Ingredients:

  • pork tenderloin, 1 lb.
  • flour, 3 T
  • lemon pepper, 2 t
  • olive oil, 2 t
  • dry white wine, ¼ c
  • lemon juice, ¼ c
  • lemon (sliced), 5 slices
  • capers (drained), 4 T
  • salt, to taste


Instructions:

  1. Slice pork tenderloin into 8 even pieces. Using a meat mallet, pound each piece of pork to thin it out.
  2. Next, sprinkle flour, lemon pepper, and salt over each pork cutlet. In a skillet, heat olive oil over medium-high.
  3. Place pork pieces in skillet and cook for about 4 minutes; flip them over and continue cooking another 4 minutes. The meat should be brown and cooked through (if not, cook a minute or two longer.)
  4. In a small bowl, combine white wine and lemon juice; stir thoroughly. Pour mixture into the skillet and cook with the pork for about 2 more minutes. The mixture should get thick.
  5. Remove skillet from heat and place the pork slices on a serving platter. Place lemon slices and capers on top and serve.

Pork with Mango Salsa

A light and fresh take on a classic.

Yields 6 Servings

Ingredients:

  • pork tenderloin, 1 lb.
  • non-stick cooking spray
  • red bell pepper (chopped), 1
  • fresh cilantro (chopped), 1 ¼ c
  • green or purple cabbage (shredded), 2 c
  • carrots (shredded), ½ c
  • jalapeno pepper (minced), 1
  • mango (peeled, cubed), 1
  • prepared salsa, 6 T
  • salt, to taste

Instructions:

  1. Preheat oven to 450 F. Grease a large skillet with cooking spray and heat on medium.
  2. Place pork slices in skillet and cook 2 to 3 minutes; flip and cook another 2 to 3 minutes to get a nice sear.
  3. Place skillet in oven and bake pork for about 15 minutes (meat should reach 160 F.)
  4. Remove pork from oven and let cool for about 5 minutes.
  5. Meanwhile, arrange cabbage, bell pepper, carrots, and mango on individual plates. Slice the pork into strips and divide the strips between the plates.
  6. Top with a dollop of salsa and a sprinkle of cilantro and salt. Serve.

Spicy Pork Tenderloin

Sugar, spice, and everything nice!

Yields 4 Servings

Ingredients:

  • pork tenderloin, 1 lb.
  • smoked paprika, 1 T
  • salt, ½ t
  • brown sugar, 1 ½ t
  • sugar, 1 ½ t
  • chili powder, 1 ½ t
  • ground cumin, 1 ½ t
  • black pepper, 1 ½ t

Instructions:

  1. Preheat oven to 425 F. Meanwhile, in small mixing bowl, combine paprika, salt, black pepper, cumin, brown sugar, chili powder, and sugar.
  2. Rub spice mixture onto entire pork tenderloin. Put pork in non-stick baking dish and cook in oven for about 30 to 35 minutes. The meat should reach 160 F.
  3. Take pork out of oven and let cool 5 minutes. Slice pork and serve with a vegetable and starch.
