4 cups cooked chicken, cubed
2 bags mixed lettuce
1 bag spinach
1 cucumber, peeled and sliced

1/3 cup grated parmesian cheese

Place all ingredients in a bowl and toss the salad. Serve with dressing of your choice.
Southwestern chicken wraps is one of our feisty fast dinner ideas for your menu. The ingredients are simple and it is one of the easiest fast dinners to make.
Ingredients:
4 cups cooked chicken, chopped or shredded (or add a package of chicken breast to your grocery list, cook in a pan, let cool and chop)
1 cup reduced-fat sour cream
2 tablespoons pickled jalapenos, diced (add more if you desire to increase heat)
2 tablespoons fresh lime juice
6 sandwich wraps
1 can black beans, rinsed / drained
4 cups rinsed baby spinach, chopped
2 cups rinsed cilantro
1 large tomato, diced
1 small to medium onion, diced
1 avocado, chopped
1 can corn, rinsed / drained
Prep Time: 10 minutes Cook Time: None
Directions:
Mix sour cream, jalapenos and lemon juice. Divide mixture equally among the 6 sandwich wraps and spread.
Place remaining ingredients equally on wraps.

Lemon Chicken Piccata for Fast Dinners

Ingredients:
4 boneless, skinless chicken breasts
1/2 lemon, thinly sliced
1 clove garlic, minced
1/2 cup all-purpose flour
1 cup chicken broth
2 tablespoons vegetable oil
1/4 cup lemon juice
3 tablespoons butter
salt and pepper to taste
2 tablespoons minced Italia parsley
Prep Time: 15 minutes Cook Time: 30 minutes
Directions:
Add the flour, salt and pepper in a bowl. Dredge the chicken in the flour and place in a heated skillet with oil. Pan fry until golden brown on both sides.
Set aside chicken. Drain most of the oil from the skillet, add garlic and cook 20 seconds. Add chicken broth, butter and lemon slices. Bring to boil. cook for 5 minutes.
Place chicken in a serving dish, pour skillet contents on top of chicken.
Add parsley and serve.
